1 SALT & PEPPER SQUID There's nothing like admiring SA's coastline while tucking into a pile of freshly fried calamari. Star of Greece does it right, the tender strips of squid made crispy with a delicate salt and pepper coating. It's served with chipotle aioli and lime as an entree ($15), or salad as a main ($34).

2 PIE FLOATER The great South Aussie pie floater is given restaurant treatment. While the traditional beef pie is served on garlic mash ($22), it's the vego version - made with pumpkin, leek, thyme, spinach and goat's cheese, that sits - or floats - in a pool of green pea soup ($20).

3 PAVLOVA Split open a passionfruit and what spills out is a very patriotic green and gold. Jolleys Boathouse has turned this pulp into a tangy curd that is an inspired match to the sugary crunch and chew of that other great Aussie icon, the pavlova, topped with a blob of stiff double cream ($15.50).Jolleys Boathouse, 1 Jolleys Lane, city, 8223 2891, jolleysboathouse.com
